Pastrami Scones ~ Easy RecipeBy far the most tastiest scones I have ever had, crunchy on the outside & soft on the inside.
Ingredients
225g flour
2 tsp baking powder (or 1 if using rising flour)
Pinch of salt & pepper
55g butter
100g cheese (big pile of grated cheese)
80-90 ml milk, plus extra for glazing
Baking Paper
1 Cup of Pastrami, chopped into chunks.
Step 1
Preheat oven with the baking tray inside to 200.C. In a large bowl sift the flour, salt, pepper & baking powder. Optional: Sift again to make sure there's no lumps in your flour.
Step 2
Cut the butter into cubes, place in the bowl, and then mix with your fingertips to make breadcrumbs (it will seem like there's too much flour but it's fine).
Sprinkle the grated cheese into the breadcrumb mixture and rub in until the cheese is evenly distributed. Try not to mix too much as the heat from your hands may start to melt the cheese.
Step 3
Make a hole in the center of the mixture and pour in enough milk to give a fairly soft but firm dough. Do not pour in all the milk at once as you may not need it all to get the right consistency. Add the cup of chopped Pastrami into the mixture.
Step 4
Lightly flour a surface and roll out the dough to approximately 2cm thick. Lay baking paper on a hot oven tray & cut out the scones into 5 or 6 pieces & place on tray.
Glaze the tops with the extra milk and sprinkle a little cheese on the top of each scone before putting in the oven.
Step 5
Bake in the oven for 10 minutes, check & bake for another 5 minutes or until golden brown.
